I love a one bowl recipe because they're just so quick to make and so delicious. Especially when the recipe is made with items you usually have in your cupboard.

These are so quick and easy to whip up!

I thought my 12 year old wouldn't be a fan of these as he is not a Peanut Butter or dark chocolate fan but he told me he "LOVES THEM". So much, I had to ration them so I could give some to the team to try before they were all gone.

Ingredients

  • 1 Egg, large
  • 1/3 heaped cup Peanut butter
  • 1/2 cup 56% dark chocolate buttons + 1 Tbsp for sprinkling
  • 1/2 cup caramel chocolate buttons + 1 Tbsp for sprinkling       (alternatively just 1 cup of milk or dark chocolate buttons)
  • 1 cup plain flour
  • 1 cup Brown sugar, light packed
  • 1 Tbsp Vanilla extract
  • 110g unsalted butter (melted)

Method

  1. Preheat oven to 175°C.
  2. In a large, microwave-safe bowl melt the butter, about 1 minute on high power (only just melt, not hot)
  3. Add in and whisk together the melted butter, vanilla, brown sugar, and peanut butter. 
  4. Mix in egg.
  5. Stir in the flour with a spoon and mix until just combined.
  6. Stir in chocolate chips
  7. Turn the batter into a greased 20cm Square (8×8-inch) pan and sprinkle a few more chocolate chips on top. 
  8. Bake the peanut butter chocolate chip bars for about 18-20 minutes until a toothpick or knife inserted in the centre comes out clean.
  9. You’ll need to let them cool in the pan for 30 minutes before slicing and serving.
  10. Bars will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.
